Craft chocolate is chocolate that is handmade or produced on a small scale using high-quality ingredients and traditional production methods. Craft chocolate usually contains more cocoa mass and less sugar, which gives it a deeper and richer taste than mass-produced chocolate.

Focus on 2 factors when choosing coffee.

1. Roast level. If you are making espresso or using a Moka pot, choose varieties roasted specifically for espresso.
2. Next, choose the intensity and acidity to your taste. Coffee, like wine, has different tastes depending on the region, altitude, and other factors.

All of the coffee in our store is Arabica. In 15 years of being in the coffee business, we have never understood the need for Robusta when there is delicious Arabica available. Robusta is a very simple coffee, without a bright flavor and with an excessive amount of caffeine. It is not tasty nor healthy. More information can be found in our blog.

For each variety, we select an individual roast level to fully reveal all the taste advantages. Typically, varieties for alternative brewing methods (Turkish, French press, Aeropress, pour-over, etc.) have a light to medium roast. Varieties for espresso are generally roasted slightly darker.

The valve on the coffee package serves to release carbon dioxide while protecting the coffee from oxygen exposure. In the first few days after roasting, coffee releases several liters of carbon dioxide, which, if left in contact with oxygen, can cause the coffee to lose its freshness. If there is no valve on the package, it means the coffee has been degassing for some time and has likely lost up to half of its flavor and aroma. To prevent this, we package our coffee immediately after roasting and always use packages with valves, which allows us to preserve the taste and aroma for much longer.
